대장암 1위 국가 오명 씻고 장건강 회복하는 '한국형 글로벌 장건강 프로젝트'
'바이오제닉아민' 최소화시킨 청국장 제조·공정화 '대한민국 대표 푸드'로 정착

우리나라의 대장암 발병률은 전 세계 1위다. 인구 10만명 중 45명이 이 병을 앓고 있다. 경제 후진국에서나 발병하는 결핵을 앓고 있는 환자도 한국이 전 세계에서 압도적 1위로 인구 10만명당 97명에 이른다.

한국은 분명히 과거보다 훨씬 잘 먹고 잘 사는 것 같은데 왜 이같은 상황이 발생할까? 전문가들은 한국인들의 식문화 변화에서 가장 큰 원인을 찾는다. 특히 한국인들이 전통적으로 단백질 섭취의 대부분을 식물성 단백질인 콩에서 했던 반면 지난 10년 동안 고기 섭취를 통한 동물성 단백질을 섭취하는 서구형 식문화로 빠르게 변화하면서 장건강에 이상이 생겼다는 것이다.이런 점에서 3년 전 민간에서 시작, 현재는 민관공동 형태의 범국가적인 차원에서 전 세계 대장암 1위 국가라는 불명예를 불식시키고 한국인의 장건강을 찾기 위한 '한국형 글로벌 장건강 프로젝트'가 진행되고 있고 있어 주목된다.

[비즈니스리포트]는 '한국형 글로벌 장건강 프로젝트'의 일환으로 대한민국의 전통 발효식품인 '청국장'의 제조 공정 표준화 개발을 진두지휘하고 있는 '태초먹거리'의 저술자로 잘 알려진 (주)한국분석기술연구소 이계호 교수(65)를 19일 서울 여의도 중소기업중앙회 그랜드홀에서 만났다. 한국의 태초먹거리 전문가인 이계호 소장에게 '한국형 글로벌 장건강 프로젝트'의 시작 배경과 향후 계획에 대해서 자세히 들어봤다.

-우리나라의 대장암 발병률이 세계 1위다. 한국인들의 장건강 상태가 그렇게 심각한가.
"우리나라 사람들이 전 세계에서 대장암 발병률 1위다. 그 중에서도 남자가 여자보다 발병률이 높다. 다시 말해 대한민국의 남성들이 전 세계 가장 높은 대장암 발별률 1위 국가에서 '특등'을 하고 있다는 것이다. 이 정도로 장건강이 나쁜데도 정작 장건강에 관심이 없다. 성공하려고, 돈 벌려고 그냥 땅만 보고 달리고 있기 때문이다."

"모든 질병에는 원인이 있다. 우리나라 사람들은 병의 증상을 치료하는 비법과 특효약에만 관심이 맞춰져 있다. 하지만 아무리 비법과 특효약이 있다 하더라도 그 사람의 삶 속에서 원인이 매일 반복되고 있다면 문제를 근본적으로 해결할 수 없다."

"그렇다면 장이 나빠지고 있는 이유가 뭘까 생각해보면 음식, 환경, 생활습관 이렇게 세가지다. 이것이 한국 사람이 전세계에서 가장 장건강이 나쁘게 하는 이유가 되어버렸다. 이같은 현상이 10대, 20대까지 내려가고 있다. 애들도 오직 목표가 수능이고 이로 인한 스트레스가 크다. 또한 먹는 것은 인스턴트다. 이렇게 장에 나쁜 것만 골라서 하기 때문에 전 세계 1등 대장암국가가 되는 것다. 이같은 현상이 지속된다면 10년 뒤에는 한국의 대장암 발병률은 타의 추종을 불허하게 될 것으로 예상한다."

-한국형 글로벌 장건강 프로젝트 제안 배경은 무엇인가.
"식품의약품안전처에서 연구소에 연구비를 지원해 지난 3년 동안 대한민국 사람들이 먹고 있는 커피분석을 해달라고 해서 커피성분 분석을 했고, 같은 팀에서 청국장 분석도 했다. 분석 결과, 청국장에 들어가는 재료 및 공정 표준화가 안되다 보니 시중에 유통되고 있는 청국장에서는 먹어서는 안될 제품이 많았다. 그래서 발효식품인 고추장이 유명한 순창 지역의 군수를 직접 찾아갔다. 젊은 사람들이 좋아할 수 있는 청국장을 만들고 먹도록 해서 장건강을 회복시켜야 한다고 했다. 이에 본격적인 연구를 위해 정부의 지원이 필요하다는 판단하에 정부과제를 신청했다."

"보통 '청국장'이라면 농림축산식품부를 생각하겠지만, 과학기술정보통신부를 찾아갔다. 과학기술정보통신부는 우리나라 전통 과학 중에서 과학화가 안됐거나 세계화가 안된 것이 있으면 후원을 하고 있다. 이에 청국장 아이템을 냈다. 단순히 국내에서 연구하는 것뿐만 아니라 밖에 나가서 일본의 '나또'와 싸워보겠다고 했다. 더군다나 우리나라는 발효기술을 일본으로 전수했다. 종주국의 자존심이 걸린 문제였다."

"이에 과학기술정보통신부에서 5년 동안 연구비 50억을 투자했고, 지차제 순창군과 전라북도가 합쳐서 총 63억5000만원의 연구비가 5년 동안 투자되기로 됐다. 이에 6개 대학, 3개 연구소가 열심히 연구·개발하고 있다."

-현재 프로젝트 진행상황이 어떤가.
"대한민국의 탄생 이후 청국장에 대한 가장 넓고 깊은 연구가 진행되고 있다. 또한 단순하게 연구·개발에 그치는 것이 아니라 마케팅까지 해서 '해외에 나가서 나또를 이겨봐라'에 초점이 맞춰져 프로젝트가 진행 중이다."

"6개 대학의 참여한 팀은 청국장의 기능성에 대해서 연구를 하고 있다. 동물, 인체 실험을 통해서 면역, 아토피, 당뇨, 비만 등 기능성 연구를 하고 있고 현재까지 좋은 결과가 많이 나오고 있다. 우리팀은 제조·공정 표준화 개발을 하고 있다. 냄새가 안나고, 좋은 물질이 가장 많이 나오게 하는 제조 방법, 나쁜 물질이 가장 적게 나오게 하는 제조 방법 등 발효 제조 공정 등을 표준화 시키는 일이다. 다시 말해 전통기술과 첨단기술이 만나서 한국의 전통 기술을 극대화 시키는 것을 하고 있다."

"모 방송 프로그램에서 변비 환자들을 대상으로 청국장 섭취 전후의 장 상태를 의사들과 같이 검사했는데, 모두가 깜짝 놀랄만한 결과가 나왔다. 올해 대대적인 임상실험을 통해서 진행할 계획이다. 이후 식약처를 통해 기능성 인증 받는 절차도 밟을 계획이다."

"궁극적으로 우리의 목적은 대장암 1위 국가라는 불명예를 벗자는 것이다. 지난 10년동안 한국인들의 영양섭취가 콩단백질에서 고기단백질로 바뀌면서 장건강이 급속도로 안좋아졌는데, 고기도 먹으면서 한국사람의 신토불이 콩단백질 섭취를 늘리는 방향으로 가고자 한다. 특히 10대, 20대, 30대 젊은층이 타겟이다."

"청국장의 형태가 3가지 형태로 나오는데 하나는 찌개용, 두번째는 낫또 식사용 용으로, 세번째는 분말로 갖고 다니면서 먹을 수 있는 형태다. 현재 나또는 국내에서는 P사에서 가장 많이 팔고 있는데, 일본균을 수입해와서 우리나라 콩에 접촉을 한 것이다. 하지만 우리가 발견한 균은 순창에 있는 시골 고추장에서 발견된 균이다. 전 세계에서 한번도 공개되지 않았던 전통 균주를 찾아서 특허를 냈고 현재 제품을 만들어내고 있는 중이다."

-구체적으로 청국장을 선택한 이유는 무엇인가.
"사람이 살아가는데 세가지 필수 영양소가 있다. 단백질, 탄수화물, 지방이다. 우리나라 사람들은 그동안 단백질의 유일한 출처원이 콩이었다. 근데 갑자기 지난 10년 동안 고기로 바뀌었다. 콩단백질은 식물성 단백질이고 고기단백질은 동물성 단백질이다. 한국 사람은 원래 체형이나 장의 길이가 식물성 단백질에 맞게 유전적으로 발전되어 왔다. 보통 식물성 초식 동물은 장의 길이가 길고, 육식성 동물은 장의 길이가 짧다. 장의 길이가 길게 된 한국형의 장에 갑자기 동물성 단백질이 너무 많이 들어오게 된 것이다. 단백질을 먹긴 먹어야 하는데, 음식 중에 콩이 차지하고 있는 비중이 굉장히 크다. 그래서 콩에 관심을 가졌다."

"4~5년 전부터 유산균 열풍이 한국에 불었는데, 유산균에 대해서 얘기하는 사람은 내가 방송에서 얘기하는 것을 싫어한다. 왜냐하면 유산균과 지금 우리가 발견한 균을 비교하면 게임이 안되기 때문이다. 첫째는 열이다. 온도가 40도가 넘으면 유산균은 다 죽어버린다. 하지만 이 균은 100도가 되도 안죽는다. 100도가 되면 이 균은 밖에 껍질을 다 버린다. 껍질로 자신을 보호하다가 장 속에 들어가서 온도 37도, 물이 있으면 자동적으로 풀려서 번식이 된다.

"반면 유산균은 내려가면서 위산에 100% 다 죽는다. 그래서 유산균 관련 각 회사마다 2중캡슐, 3중캡슐을 말하는 이유가 여기에 있는 것이다. 내산성, 내열성에 있어서 유산균과 한국 토종 균과는 비교가 안되는데 왜 유산균을 그렇게 많이 얘기하냐면 이 유산균은 미국과 유럽에서 치즈를 기초로 해서 연구와 상업화가 너무 많이 됐기 때문이다. 하지만 청국장의 균은 비교가 안될 정도로 연구가 안되어 있는 상태다. 우리는 그냥 5천년동안 내려왔던 청국장만 있을 뿐이지 논문화가 된 것이 없다. 비교 데이터가 전무하다 보니 상업화에서 청국장이 유산균을 따라갈 수 없을 뿐이다."

-확산성에 있어서 청국장이 일반 유산균 대비 압도적이라고 들었다.
"유산균은 우리 몸에 들어가서 번식을 해야 하는데 먹이가 없어서 확산이 안 된다. 그 유산균 먹이를 프리바이오틱이라고 하고, 유산균을 프로바이오틱이라고 한다. 청국장은 먹이가 포도당이다. 콩에는 포도당이 어마어마하게 들어있다. 따라서 콩을 먹으면 프리바이오틱도 먹고 프로바이오틱도 먹게 된다. 따로 먹을 필요가 없는 것이다. 동치미, 백김치도 우유 유산균과 비슷한 균이 있는데 똑같이 그 속에 식이섬유인 '배추', '무'라는 프리바이오틱이 있다. 일반 유산균과 게임이 안 된다.

"만약에 밖에서 팔고 있는 가장 강한 유산균과 청국장과 섞었다면 청국장 균이 너무 강해 유산균이 힘을 못쓸 정도다. 이건 이미 과학적으로 증명이 됐음에도 불고하고 기존 유산균 업계가 과학적 데이터와 자금이 있다 보니 청국장이 밀리고 있는 상황이다. 그래서 요즘에는 유산균 업계에서도 프리바이오틱을 섞어서 팔거나 또는 따로 파는 등 새로운 마케팅을 하고 있다.

-장건강 프로젝트로 생산되는 청국장의 개선점은 무엇인가.
"커피를 볶을 때 아크릴아미드란 발암물질이 나온다고 얘기했는데 청국장을 발효시킬 때, '바이오제닉아민'이란 물질이 나온다. 전통발효식품은 발효하면 당연히 '바이오제닉아민'이 나올 수 밖에 없다. 외국을 보면 우유를 발효해 치즈를 만들었는데, 똑같이 '바이오제닉아민'이 문제가 됐다. 그러나 이 나라 사람들은 과학적으로 균주 표준화, 제조공정 표준화를 통해 '바이오제닉아민'를 최소량으로 낮췄다."

"반면 과거 우리나라는 한번도 '바이오제닉아민'을 최소화시키는 공정을 해본 적이 없다. 전 국민이 발효식품에 대한 애국심이 강해서 '지금까지 먹었는데 그것에 왜 시비를 거냐'란 반발에 부딪쳐 식품영양학과 교수들 조차도 '바이오제닉아민'에 대해서 방송 등에 나와서 얘기하는 것을 금기시하고 있기 때문이다. 김치, 된장, 고추장 등 우리나라 장류는 전부 '바이오제닉아민'이 나오는데 누군가가 '바이오제닉아민'을 얘기했다하면 우리나라에 못살 정도다."

"나는 그것을 문제화 하려는 것이 아니고 '바이오제닉아민'이 나오는 것을 최소화시키고 과학화시켜 공정화시키고 있다. 현시점에서 정부의 지원을 통해 국가과제를 했는데, '바이오제닉아민'을 청국장에서 최소화 시킬 테니 이번 기회에 전통발효식품의 가장 큰 숙제인 '바이오제닉아민' 최소화를 다른 식품에도 적용했으면 한다.

"아마 '바이오제닉아민'이란 말이 나오면 여러 곳에서 말씀이 많을 것이다. 하지만 나는 지금이라도 알았으니까 우리와 같이 제조공장 표준화를 시켜서 최소화 시키자 라는 것이다."

-사업적인 전망도 궁금하다. 세계 5대식품에 올라 있는 ‘나또’ 시장과 비교해도 좋을 것 같다.
"단순히 찌개용 청국장뿐만 아니라 한끼 식사 또는 환자식, 여성들 다이어트식, 이유식도 가능하다. 과제를 통해 상품으로 아이디어가 나오는 것을 보면 드링크류도 개발할 수 있고 다양한 제형의 식품으로 확대될 수 있을 것으로 보고 있다."

"나또를 추월할 수 있을 것으로 본다. 현재 나또의 경쟁 상품이 없는 상황이기 때문이다. 더군다나 발효는 우리가 종주국으로 일본에게 가르쳐준 기술이다. 자존심의 문제이기도 하다. 그런 의미에서 전통기술과 첨단과학이 만난 첫 번째 사례다. 한국의 전통 기술을 한 단계 업그레이드 시키는 과정으로도 볼 수 있다."

-장건강 외에 청국장의 건강적인 효능에 대해서 설명한다면.
"나또나 청국장을 보면 늘어지는 끈끈이가 있는데 이것을 PGA라고 하는데 이것이 항암효과가 있고 이것으로 여성들의 자궁경부암 백신을 만든다. 또한 골다공증을 막는데 꼭 필요한 비타민 K도 나온다. 그 외에도 아미노산, 중년 여성들의 갱년기에도 콩의 포함된 인소폴라빈이라는 요소가 여성들의 인스트로겐과 구조가 비슷하다. 콩은 종류의 관계 없이 갱년기 여성들에게 상당히 도움이 된다."

-이 프로젝트를 통해 이루고 싶은 포부를 말한다면.
"우리나라 발효식품의 과화화의 첫 시도다. 우리 10대, 20대 젊은이들의 장건강이 계속해서 안 좋아지고 있는 상황에서, 대장암 1위 국가라는 불명예를 벗어나고, 우리나라의 국민의 장건강을 회복시켜 건강한 나라로 만들고 싶다."

Professor Lee Kye-ho of the Korea Institute of Analysis and Technology explains the "Korean Global Long-Health Project" in an interview with the Business Report held at the Grand Hall of the Korea Federation of Small and Medium Business in Yeouido, Seoul on Wednesday.

Korea has the highest incidence of colorectal cancer in the world. Forty-five out of every 100,000 people suffer from the disease. South Korea is the overwhelming No. 1 country in the world, with 97 cases per 100,000 people suffering from tuberculosis only in economically underdeveloped countries.

Korea apparently eats much better and lives well than in the past, so why is this happening? Experts find the biggest cause of Korean food and culture changes. In particular, while Koreans have traditionally done most of their protein intake in soybeans, a vegetable protein, they say that over the past decade, the disease has developed into a Western-style eating culture that ingests animal protein through meat consumption.In this regard, attention is being paid to the ongoing "Korean Global Long-Health Project," which began three years ago in the private sector and is now seeking to dispel the disgrace of being the world's No. 1 nation for colon cancer in the form of a pan-national one in the form of public-private partnerships.

As part of the "Korea-style Global Long-Health Project," [Business Report] met Lee Kye-ho, a 65-year-old professor of the Korea Institute of Analysis and Technology, at the Grand Hall of the Small and Medium Business Society in Yeouido, Seoul on Wednesday, who is well known as the author of "Taecho Food," which is spearheading the development of standardization of the manufacturing process of "Cheonggukjang," a traditional Korean fermented food. Lee Kye-ho, a Korean taecho food expert, gave a detailed overview of the start of the "Korean Global Long-Health Project" and its future plans."

- Our country has the highest incidence of colorectal cancer in the world. Is the long-term health condition of Koreans so serious?
People in our country have the highest incidence of colorectal cancer in the world. Among them, men are more likely to develop than women. In other words, men in South Korea are "specialized" in the world's No. 1 country for colorectal cancer incidence. Despite his poor health, he is not interested in Jang's health. To succeed, I'm just running on the ground to make money."

"There is a cause for all diseases. People in Korea are only interested in the secret recipe and special medicine for treating symptoms of disease. However, no matter how many laws and specialties there are, the problem cannot be fundamentally solved if the cause is repeated every day in a person's life."

If you think about why the intestines are getting worse, there are three things: food, environment and lifestyle. This has become the reason why Koreans have the worst long-term health in the world. This phenomenon is going down to teenagers and twenties. Children only have a high level of stress because of the CSAT. Also, eating is instant. Because it only chooses bad things in the market, it will become the world's No. 1 blacksmith country. If this continues, we expect Korea's colon cancer rate to be unrivaled in 10 years."

- What is the background of the Korean-style Global Long-Health Project proposal?
The Ministry of Food and Drug Safety provided research funds to the research institute and analyzed the ingredients of coffee by asking them to analyze the coffee that people in Korea have been eating for the past three years, and also analyzed the director-general from the same team. According to the analysis, there were many products that should not be eaten at Cheonggukjang, which are in circulation because of the lack of standardization of materials and processes that go into Cheonggukjang. So I went to the county water of Sunchang area where fermented hot pepper paste is famous. We should restore our health by making and eating Cheonggukjang, which young people can like." In response, the government applied for the government project, judging that it needs government support for full-fledged research."


I would normally think of the Ministry of Agriculture, Food and Rural Affairs if I was a "Cheonggukjang," but I visited the Ministry of Science, ICT and Information and Communication. The Ministry of Science, ICT and Information and Communication is sponsoring any of the nation's traditional sciences that have not been scientific or globalized. He posted an item of director. He said he would not only study at home but also go outside and fight Japan's "Nato." Furthermore, Korea has transferred the fermentation technology to Japan. It was a matter of national pride."

The Ministry of Science, ICT and Information and Communication has invested 5 billion won in research over the past five years, and a total of 6.35 billion won will be invested in research by combining Ji Cha-je, Sunchang County and Jeollabuk-do for five years. As a result, six universities and three research institutes are working hard to research and develop."

-What's the current progress of the project?
Since the birth of the Republic of Korea, the widest and deepest study of Cheonggukjang has been under way. In addition, the project is under way with the focus of "Go abroad and beat Nato" by marketing rather than simply research and development."

A team of six universities are working on the functionality of Cheonggukjang. Through animal and human experiments, we are doing functional studies such as immunization, atopic dermatology, diabetes and obesity, and so far we have a lot of good results. Our team is developing manufacturing and process standardization. Standardizing the fermentation manufacturing process, such as manufacturing methods that do not smell good, make good substances come out the most, and manufacturing methods that cause the least amount of bad substances to come out. In other words, traditional technology and technology are meeting to maximize Korea's traditional technology."

"In a broadcast program, we tested constipation patients with intestinal conditions before and after eating director, and everyone had surprising results. It plans to conduct a major clinical trial this year. It also plans to take steps to obtain a functional certificate through the Ministry of Food and Drug Safety."

"In the extreme, our aim is to remove the disgrace of being the No. 1 country in colon cancer. Long-term health has rapidly deteriorated over the past 10 years as Koreans' nutrition has changed from soy protein to meat protein, and as they eat meat, they want to go toward increasing the consumption of soy protein. The target is especially young people in their teens, 20s and 30s."

There are three types of Cheonggukjang, one for stew, the second for Natto, and the third for carrying in powder. Currently, I or P sells the most in Korea, but I have been in contact with Korean soybeans by importing Japanese bacteria. But the fungus we found was found in the country's gochujang in Sunchang. We found and patented traditional strains that have never been made public around the world and are now making products."

-Why did you choose Cheonggukjang in detail?
"There are three essential nutrients for a person to live on. Protein, carbohydrate, and fat. People in Korea have been the sole source of protein. But all of a sudden, it has turned into meat over the last 10 years. Soy protein is vegetable protein and meat protein is animal protein. Korean people have originally developed their body types or intestines genetically to match vegetable proteins. Usually, plant herbivores have a long bowel and carnivores have a short bowel length. The length of the intestines in Korea has suddenly become too many animal proteins. They should eat protein, but soybeans make up a huge portion of their food. So I was interested in soybeans"


"There has been a lactobacillus craze in Korea since four to five years ago, and anyone who talks about lactobacillus hates what I'm talking about on the air. Because compared to lactobacillus and the fungi we have now found, we can't play games. The first is heat. If the temperature is over 40 degrees Celsius, the lactobacillus will all die. But this fungus doesn't die even if it's 100 degrees. When it reaches 100 degrees Celsius, the bacteria dumps all the shells outside. Protecting yourself with a shell, enter the intestine and automatically release the skin if you have 37 degrees of temperature and water.

The lactobacillus dies 100 percent of the stomach acid as it goes down. That's why each company involved in lactobacillus says double capsules and triple capsules. There is no comparison between lactobacillus and Korean native fungi in terms of acid resistance and heat resistance because the lactobacillus has become too much of a cheese-based research and commercialization in the U.S. and Europe. However, the fungus in Cheonggukjang has not been studied to the point where there is no comparison. We just have a director who has been down for five thousand years, and nothing has ever been published. With no comparative data available, the Director General cannot keep up with lactobacillus in commercialization."

- I heard that the Director General is overwhelming compared to the general lactobacillus in terms of proliferation.
The lactobacillus needs to go into the body and reproduce, but it cannot spread because there is no food. The lactobacillus food is called prebiotic, and lactobacillus is called probiotics. The cheng director's food is glucose. Beans contain a great deal of glucose. Therefore, if you eat beans, you will eat the prebiotics and the probiotics. You don't have to eat it separately. Dongchimi and Baekkimchi also have bacteria similar to milk lactobacillus, which are equally freebiotics called "bachu" and "mu." No games with regular lactobacillus.

If it is mixed with the strongest lactobacillus sold outside, the chunggukjang bacteria are so strong that the lactobacillus can`t help. Although this has already been scientifically proven, the director general is behind because the existing lactobacillus industry has scientific data and funds. So, these days, the lactobacillus industry is making new marketing by mixing or selling the prebiotics separately.

- What are the improvements to Cheonggukjang produced by the Long-Term Health Project?
